however, when baby girl woke up at 5:30 a.m. on saturday morning ready to go for the day, i knew i'd need to eat before we headed out for doughnuts. so i began looking through cookbooks salivating over the yummy possibilities i could make for our first breakfast of the day.
after spending a good half hour looking at recipes, my stomach reminded me that i needed to start cooking. so, i decided on a gingerbread pancake recipe my mom had given me but had never tried.
with baby girl strapped into the baby bjorn, we started whisking the ingredients together, working quickly so we could surprise mr. pike with breakfast in bed.
after stacking a few pancakes and smothering them with syrup, baby girl and i brought some in to a slumbering mr. pike. i hadn't tried them yet, but mr. pike's first bite told me that they were scrumptious. i had to take the second bite to taste for myself. i then ate four.
these pancakes were a yummy fall start. and a good prelude to our second breakfast -- the apple cider doughnuts.

gingerbread pancakes
2 1/2 c. flour
3 t. baking powder
2 t. baking soda
1/2 t. salt
1 t. cinnamon
1/2 t. ginger
1/4 c. molasses
2 c. milk
2 beaten eggs
6 T. butter, melted
combine flour, baking powder, soda, salt, cinnamon, and ginger. in a separate bowl warm milk, add melted butter and molasses, then eggs. make a well in the dry ingredients and pour liquids in center. stir until just combined. (i like to let the batter sit for at least 15 minutes (or longer) before cooking to let the powder and soda have time to react, so the pancakes are nice and fluffy.) pour 1/3 cup on hot griddle. serve with maple syrup.

Seriously, yummy morning! You're such a great cook. I've never heard of apple cider donuts. I bet they are wonderful.
Ooh, hey, I just blew up the pic of you and baby girl. Her hair seems to be darkening and she is looking very Marilyn in this one! Cute! I love how babies keep you guessing the first few months. I wonder if you notice the changes in appearance seeing your kids everyday- it is so apparent when you only get to see pictures every couple of weeks, that they definitely go through little changes while they are settling into their final features!
I love fall food -- apples, zucchini, pumpkin, gingerbread.... Just the other day I pulled out all my recipes with those ingredients and have already been spending way too much time in the kitchen. I'll have to add these pancakes to the stack. :)
You are so creative... I'd gain a hundred pounds living in your house though. Maybe I can blame YOU for the fifteen pounds I put in college. I always thought it was Veeda and the never ending late night ice cream but maybe it was both:) Fun though! I love fall too. I am excited to go apple picking this season!
