tea time two

tuesday night's tea party - etiquette lesson seemed to be a success. i'm not sure how all the girls felt who came, but i quite enjoyed myself.

baby girl and i dressed up for the occasion. a good reason to dust off my 2006 singles' ward prom dress and put on dangling earrings. (lesson learned - babies and dangling earrings don't mix. baby girl about tore my earring out!)

since the girls ages 12-13 were in charge of the evening, they all pitched in an brought yummy goodies to share at our tea party. i brought cucumber sandwiches -- one of my family's favorites. (i share the how-to below, if you're interested.)

a few etiquette tips that were shared --

-if you leave the table during a meal, but are not finished with your plate, set your napkin to the right of your plate. when you are finished with your plate, set your napkin to the left of your plate.
-don't cross your legs under the table, so you're not playing footsies with your neighbor as you cross your legs back and forth.
-don't cut your roll. rip off pieces of the roll to eat. butter or spread jam to the ripped pieces as you eat, not all at once.

cucumber sandwiches


usually, our family cuts the white bread in circles. i didn't have a small round cookie cutter -- so i cut squares. you can get four squares (or rounds) from one slice of bread. (make sure you cut off the crust.)

slice your cucumber thinly - i like using english cucumbers. i think they have a better taste and are prettier. soak your cucumber slices in a container with equal parts water and white vinegar for at least 30 minutes. i soaked mine for two hours.

while the cucumbers are soaking, make your cream cheese spread. my mom likes to mix cream cheese (slightly soft) with blue cheese crumbles. i like this mixture best too. i didn't have enough blue cheese crumbles left in my fridge so i also added a few tablespoons of ranch dressing. (you can play with the flavor of the cream cheese mixture to suit your tastes.)

pat dry your cucumber slices with paper towels. spread the cream cheese mixture onto your bread. top with cucumber. sprinkle with lemon pepper.

when i was a child, i loved helping my mom make these sandwiches. we had them at almost every special occasion at our home. i loved cutting the bread and eating the leftover pieces. (it was the only time we ever had white bread to eat and that was a treat!) when i was a little older, i'd help spread the cream cheese mixture on the bread. i loved the taste of the blue cheese and would lick the bowl when we were done. and i always loved sprinkling on the lemon pepper -- sometimes not so even handed.

this was the first time i had made cucumber sandwiches without my mom. but as i assembled them on my own, memories of us in the kitchen rolled through my mind. it's kind of funny to think that cucumber sandwiches will always remind me of her.

You still look amazing in your prom dress from 2006? I am now re-thinking the bagle and cream cheese I was about to have this morning.

Baby girl you look so delicious! I could eat your darling cheeks and chunky legs! I'm glad to see you upright too-it gives a whole new dimension to your face and hair. We miss you!

how fun! You and little miss all dressed up for tea and cucumber sandwiches. I bet the YW loved it! And great job with the invite on the previous post. It reminded me of all the fun invites we made for our many events at good ol' Hampton 16! Can anyone say, "Premiere night of 'The Ghost in the Invisible Bikini.'"
