wasabi potato salad
i love trader joe's. a couple weeks ago when baby girl and i were doing our shopping there, we sampled their wasabi potato salad. it was delicious. and that's when i started craving potato salad.
with all the sunshine we were enjoying this week, i decided to buy the key ingredient (wasabi mayonnaise) for the wasabi potato salad and whip some up. (and finally, satisfy my craving!) it's so easy and so yummy. and gives a little spicy twist to a good ol' picnic favorite.
if you don't have a trader joe's nearby, your local grocery store might have a version to use. or you could make your own.
so, here's my version of wasabi potato salad. (based on the sample at trader joe's.)
potatoes
wasabi mayo
mayo
flat-leaf parsley
green onions
salt and pepper
(amounts are dependent on how much you'd like to make)
dice the potatoes (i like larger chunks in my salad.) and boil with salt. remove potatoes from water when they are cooked through -- but not mushy. (boiling time will depend on how big your chunks are.)
put potatoes in a mixing bowl. add equal parts wasabi mayo and regular mayo to potatoes, along with chopped flat-leaf parsley and green onions. mix up and refrigerate.
if you like a little more spice, then add more wasabi mayo. and next time i think i'll add some chopped bacon. enjoy!
