tonight's meal - thai green curry - was lovingly made to honor pai, our thai friend. we miss her outgoing personality and loud laugh.
after stopping at the grocery store yesterday, i was so excited for the ingredients i had purchased that i wanted to cook it all up right then. i was especially anxious for tonight's dinner that was inspired by a can of coconut milk that i bought for another dish. but, then i decided i should get two cans and make green curry.
pai makes a very, very delicious batch of green curry. i knew that it'd be hard to imitate, especially since i couldn't find lemongrass at the store. the recipe i found was easy to follow, and we cut chicken breasts into bite-size pieces so we wouldn't have to cook the curry so long. we also used green beans and spinach instead of bell peppers.
mr. pike and i filled our bowls with rice and curry goodness and enjoyed the meal and a pleasant evening on the patio. this bowl's for you, pai.

I am ever so impressed in your culinary skills. I must admit, you are helping me get back into cooking. I love to read your blog. The way you write is so fun and it sounds so cool to live in a big city!! We miss you guys!!
