mr. pike and i had a lot of apples from our last adventure. and for the past week, i've stared at the large bag each time i entered the kitchen. with a new job taking much of my time, i thought aspirations of applesauce would never happen.
today mr. pike came home before me and began peeling pounds and pounds of apples. so tonight became applesauce making night. we peeled, sliced, and diced apples. then filled a stock pot almost to the top. we added some apple cider, honey, cinnamon, and nutmeg and cooked it all down.
we filled our jars and processed them in a water bath. and now we have yummy applesauce for a rainy day.

you should post the recipe. I remember eating homemade applesauce from your aunt? when we were roommates and it was the yummiest thing ever.
Wow, that almost looks too good to eat!! At least you got yours done, we did not however...we wanted to can a bunch of our tomatoes, but time, money, and effort were not on our side...Or maybe we were just lazy!! Maybe next year!!
